Ingredients:
Dough:
2 sticks butter, soft
½ teaspoon salt
½ cup sugar
½ cup vegetable or olive oil
½ cup yogurt
1 Teaspoon baking soda
1 Teaspoon vanilla
3 cups flour
Filling:
3 medium size sour apples
½ cup sugar
½ teaspoon cinnamon
½ cup chopped walnuts
1 egg yolk
¼ cups milk
Recipe:
- Grate apples, combine with sugar and set aside for 5 minutes. Place over low to medium heat in a medium saucepan and simmer until all the juice is absorbed. Remove from heat let it cool. Add cinnamon and chopped walnuts. Set aside.
- Combine sugar and yogurt in a food processor or in a large bowl. Add softened butter and vanilla. Mix well. Combine with 2 cups of flour, salt and baking soda. Check the consistency of dough as you add the last cup of flour. Knead well. Adjust flour as needed to create very soft dough.
- Take walnut size pieces from the dough, in your palms flatten to create a circle, place 1 teaspoon of filling inside and cover the edges to form balls. Place the balls upside down in a cookie sheet.
- Alternatively you could also place half of the dough in a 10” pie dish, spread the filling and place the remainder of the dough as lattice.
- Paste the top of each pastry with egg yolk and milk mixture. Bake at 350F for 35 minutes or until golden brown. Sprinkle with powdered sugar.
